ESSENTIAL JOB FUNCTIONSAs a Sushi Chef, we expect you to accurately and efficiently prepare dishes that meet the culinary and aesthetic standards of the Chef team. You will be responsible for the maintenance and preparation of mise en place for your station, the upkeep of your station, and the effective and comprehensive closure of the kitchen. A Sushi Chef has the unique experience of delivering the Sushi Bar experience to every guest, which requires engagement, personality, and a high level of knowledge. This privilege is hard earned and should be regarded with a deep level of respect. A Sushi Chef is skilled, humble, ambitious, and hungry to learn. All positions are expected to meet the following job expectations and are divided into the following five competencies:TECHNICAL SKILLS AND KNOWLEDGE - Execute food product that meets the restaurants culinary and aesthetic standards.
- Maintain understanding of cooking times and temperatures as dictated by Chef Team.
- Maintain an understanding of proper kitchen opening and closure protocol.
- Handle, store, and rotate all product properly.
- Adequately balance the needs of station and guest; prepare elevated food and provide elevated hospitality.
- Food knowledge should extend much further than being able to cook, create, and plate the dishes of your station. Essential continued education includes knowledge about daily specials, allergies and modifications, special preparations, ingredients, and differences of types of fish, etc.
- Balance the needs of your guest and that of the rest of the restaurant, ie. tickets and dishes assigned to the station.
- Be able to lift up to 50 pounds regularly.TEAMWORK
- Advocate a supportive, non-judgmental work environment.
- Respectfully help your peers as necessary.
- Strive to consistently learn and teach.
- Take initiative to execute miscellaneous tasks, whether they are assigned or not. This may include: helping plate on a different station, getting ahead of prep, cleaning a neglected area of the kitchen, etc.APPEARANCE AND PROFESSIONALISM
- Maintain a clean and Sanitary Workstation and area.
- Maintain an adequately stocked tool set.
- Clean, pressed, standard issue chef coats are to be worn to service.
- Pants must be kitchen appropriate.
- All shoes must be non-slip.
- Any facial hair must be well groomed and trimmed.
- No excessive Jewelry, earrings, rings, or nails/polish.
- Attend all assigned shifts, meetings, and events on time and ready to work. Submit any
- schedule changes in advance and through approved processes.
- Perform any and all other duties assigned.COMMUNICATION
