- Be the face of MCR for new hires and team members; exemplify MCR s values and set a great example by always demonstrating excellent guest service and professionalism.
- Practice, support and promote the mission, vision, and values of Muckleshoot Casino Resort.
- Develop and design menus that reflect the culinary vision and concept of the restaurant.
- Create innovative and appealing dishes using a combination of creativity, knowledge of ingredients, and current culinary trends.
- Ensure a balanced menu that meets customer preferences, dietary restrictions, and budgetary considerations.
- Train and supervise kitchen staff, providing guidance, support, and feedback.
- Schedule kitchen staff shifts, manage labor costs, and maintain appropriate staffing levels.
- Implement and enforce food safety and sanitation standards to maintain a clean and safe working environment.
- Implement standard recipes and portion control to manage food costs.
- Stay updated on industry trends, new cooking techniques, and emerging ingredients to enhance the culinary offerings.
- Conduct performance evaluations and provide constructive feedback to encourage growth and improvement.
- Collaborate with restaurant management to develop strategies for achieving business goals and objectives.
- Develop and manage the kitchen budget, including food costs, labor expenses, and equipment maintenance.
- Implement cost-saving measures without compromising the quality of dishes.
- Analyze financial reports, monitor expenses, and make necessary adjustments to achieve profitability targets.
- Collaborate with suppliers and vendors to source high-quality ingredients.
- Create, maintain, and facilitate an upscale and positive work environment.
- Smile and engage guests and team members with a positive professional demeanor.
- Perform other job-related duties as assigned.WHAT YOU LL BRING
- Ability to obtain a Class III A gaming license.
- Associate degree in culinary arts. Experience in lieu of a degree will be considered.
- 7 (seven) years of fast-paced high-end culinary management experience required.
- Two (2) years working in a fine dining restaurant is required.
- Two (2) years of kitchen management required.
- One (1) year of food ordering is required.
- Proficiency in a variety of cooking techniques and a deep understanding of ingredient quality and seasonality.
- Must maintain a valid WA State Health Card/Food Handler permit.HOW YOU LL BE SUCCESSFUL
- Knowledge of kitchen equipment and the ability to use and maintain knives in a safe & sanitary manner.
- Knowledge of the various ingredients and presentations.
- Knowledge of food safety regulations, HACCP principles, and kitchen hygiene best practices. Knowledge of food with the ability to skillfully apply culinary techniques.
- Knowledge of weights and measurements for recipes.
- Knowledge of health & safety standards, and safety regulations as required.
- Skilled in effectively communicating ideas and information both in written and verbal form. Read, write, and speak English fluently.
- Ability to demonstrate proficient computer skills.
- Ability to Demonstrate expertise in creating exceptional culinary offerings and leading a kitchen team.
- Ability to effectively deliver constructive feedback, coaching, and performance counseling to staff members.
- Ability to recreate new dishes based on season s availability.
- Ability to quickly and authoritatively delegate job tasks to a large staff.
- Ability to identify and seize control of issues in the kitchen at a moment s notice.
